Antithesis has always meant one thing: the opposite of ordinary. From the moment you step into our historic mansion, we want you to feel that something is different here — that you’ve been transported somewhere that takes the art of dining seriously, without ever taking itself too seriously.
This has been our dream: a place where elegance and warmth live in the same room, where every guest feels genuinely welcome, and where the setting, the service, and the food all rise to meet each other. The historic, 1884 mansion isn’t just a backdrop — it’s part of the experience, woven into every detail.
The Antithesis menu is built around the beauty and bounty of Colorado and the West. Founding Executive Chef Johnny Church brings his technique and point of view to the table, along with honest seasonality and freshness, all sourced from places where nature still plays a leading role.
When you obsess over details the way they do — the sourcing, the technique, the room, the welcome — you eventually stop scouting the competition. Their ambition isn’t to be the best restaurant in the region. It’s to make this corner of Colorado a place food lovers plan entire trips around. Bold? Absolutely. But you don’t name a restaurant Antithesis because you intend to blend in.

The Menu
For the Table: A Bold Start
Dinner at Antithesis in Canon City opens with dishes built for sharing. Housemade rosemary and sea salt focaccia arrives with olive tapenade and aged balsamic, a gentle warm-up for what’s to come. From there, things get bolder: seasonal oysters with a bright apple-ginger mignonette, a rich French onion soup layered with provolone and parmesan, and a dish that could only be described as show stopping — Wagyu beef and octopus carpaccio, finished with black garlic vinaigrette and brioche.
Then there’s the dish everyone will be talking about: “Bacon Wrapped Bacon,” a decadent plate of slow-cooked pork belly, bacon, a sunny-side quail egg, tomato jam, and avocado. It’s indulgent, it’s a little cheeky, and it sets the tone for a menu that doesn’t take itself too seriously even while executing at a very serious level. Round out the starters with a citrus-forward Peruvian shrimp ceviche or pan-seared sea scallops served three ways with local corn and a cashew-raisin soy emulsion.
Signature Plates
This is where Antithesis draws its line in the sand between comfort and craft. The Classic Beef Wellington 1889 — a nod to the Robison Mansion’s own history — wraps filet de bœuf in a golden crust with mushroom duxelles and sauce Diane. The Creekstone Farms New York strip gets a South American twist with chimichurri and piquillo pepper, while the pistachio and local honey crusted Colorado lamb rack pays tribute to the state the restaurant calls home.
The 12-hour braised wild boar pappardelle brings housemade double-zero pasta together with stracciatella and basil, and the Royale with Cheese — a double smashed burger with Cooper sharp cheddar, housemade pickles, fries, and a milkshake — proves that elevated dining can still have a sense of humor. Guests looking for lighter or plant-forward options will find them too, from the organic half chicken with apple slaw to the roasted butternut squash ravioli in walnut-whiskey brown butter.
Sides and Sweets
The sides menu doesn’t play second fiddle here. Sautéed organic mushrooms from Colorado Springs’ own Mycocosm arrive in a cognac cream sauce, while roasted heirloom carrots get a maple-citrus glaze and a scatter of pistachios.
Dessert closes things out with the kind of dishes meant to be lingered over: an oak cask-aged bourbon butterscotch pudding topped with smoked Tahitian vanilla whipped cream, a strawberry and olive oil shortcake with pistachio strudel, and an Antithesis chocolate cake finished with espresso chantilly cream.
A Wine and Cocktail List to Love
The beverage program is just as considered as the kitchen. The wine list spans sparkling selections from Spain and Napa, crisp whites and rosés from Provence to Sonoma, and a red list that runs from an approachable Rioja Reserva all the way up to Napa Valley icons like Opus One and Shafer Hillside Select — a range built for both a casual glass and a true celebration. Of course, the extensive wine list offerings vary — and many do sell out.
Cocktails lean into contrast, too, with a lineup built around opposing flavor pairs: Fire & Silk balances heat and softness with rye, chili honey, and egg white; Smoke & Orchard pairs mezcal and apple brandy with charred orange. For those who prefer a classic done right, the Classics Reimagined menu offers a smoked Old Fashioned, a shadowy White Negroni, and an espresso-kissed Affogato made with local St Bernard Whiskey. Zero-proof drinkers aren’t an afterthought either, with two thoughtfully crafted non-alcoholic options rounding out the list.
